3/4 cup vegetable shortening
1 1/4 cups firmly packed brown sugar
1 egg
1 tbsp vanilla
2 tbsp milk
2 cups flour
3/4 tsp baking soda
1 tsp salt
3/4 cup toffee bits
3/4 cup sweetened shredded coconut
3/4 cup white or dark chocolate chips
1 tub Good Pantry Maple Buttercream
1. Preheat oven to 350 F.
2. Line a cookie baking tray with parchment paper.
3. In large bowl, combine shortening, and brown sugar, then beat well.
4. Add egg, vanilla, and milk. Beat for 2 minutes on high.
5. Add in flour, baking soda, salt, and mix until a thick dough.
6. Stir in toffee bits, coconut, and chocolate chips.
7. Using a tablespoon, scoop cookie batter, roll into balls and place on a tray, then flatten each ball using the palm of your hand.
8. Bake for 10 minutes or until starting to turn golden. Let cookies cool completely.
9. Spread Good Pantry Maple Buttercream on each cookie and top with additional cookie.
Makes approximately 20 cookies, and 10 cookie sandwiches. Enjoy!
