2 cups old fashioned oats
1 ½ cups finely chopped walnuts
2 tablespoons sesame seeds
1 tablespoon chia seeds
1/3 cup coconut oil melted
1/3 cup honey
2 teaspoons vanilla extract
1/2 cup mixed fruit (blueberries and strawberry pieces)
2 cups Greek yogurt
1/4 cup Good Pantry Vanilla Buttercream
1. Preheat oven to 350F.
2. Grind walnuts in a food processor until almost a flour texture.
3. Mix well first 7 ingredients.
4. Press mixture along bottom and sides of non stick muffin pan to form mini cups.
5. Bake for 25 minutes, then remove and let cool.
6. Mix Greek yogurt and Good Pantry Vanilla Buttercream, and set aside.
7. Once the baked cups are cooled, fill each with yogurt and buttercream mixture.
8. Top with mixed fruit and enjoy!
