3/4 cup oat milk
1 peppermint tea bag
1/3 cup organic honey
3 tbsp coconut oil
1/2 tsp vanilla extract
1 1/2 cups oat flour
1 1/2 tsp baking powder
1/4 cup cacao powder
1/4 tsp baking soda
A pinch of sea salt
1 cup grated zucchini (strain excess moisture or pat dry using paper towels)
1/3 cup dark chocolate chips/nibs
Good Pantry Vanilla Buttercream (garnish)
Crushed peppermint candies (garnish)
1. Preheat oven to 375 F and prepare a loaf pan lined with parchment paper.
2. Warm up oat milk and soak peppermint tea bag and set aside.
3. Combine all remaining wet ingredients in large mixing bowl.
4. Mix dry ingredients together in a separate bowl.
5. Slowly incorporate dry ingredients into wet ingredients.
6. Add chocolate chips into the mixture (save a few for garnish).
7. Remove the tea bag and add the peppermint flavoured oat milk into the batter.
8. Pour the batter into the lined loaf pan and bake for 55 - 60 mins (until toothpick test comes out clean).
9. Remove from oven and let completely cool on rack .
10. Spread or drizzle Good Pantry Vanilla Buttercream over top.
11. Garnish with chocolate chips and crushed peppermint candy.
