Pancake:
5 eggs
3/4 cup Flourish Buttermilk Protein Pancake Mix
2 tablespoons coconut sugar
1/4 teaspoon salt
3/4 cup almond milk
2 teaspoons vanilla extract
4 tablespoons butter (melted)
Filling:
2 apples (diced)
1/3 cup coconut sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon vanilla extract
2 tablespoons water
Pinch of salt
Topping:
1/4 cup Good Pantry Maple Buttercream
2 tablespoons toasted pecans
1. Preheat oven to 425F.
2. In a blender, add first 6 ingredients and blend well.
3. Pour a small amount of melted butter into each cupcake holder.
4. Fill each cupcake holder with the pancake mixture and bake for 15 minutes.
5. In frying pan add all filling ingredients and cook on medium-high for 10 minutes.
6. Fill each pancake with the apple filling.
7. Drizzle each with Good Pantry Maple Buttercream and top with toasted pecans.
9. Enjoy!
